Dateline: McCarty Family Olympics

The second McCarty Family Summer Olympics took place this past month. Lots of friendly competition, reminiscing, good food, and great times took place. As you can see by the photos below, everyone who attended from California, to New Jersey Tennessee, South Carolina, Texas, and basically, all over the country had an Olympic great time!

Dateline: Reykjavík, Iceland

Brad & I spent a week in Reykjavik just the two of us! We got to try all the food the kids didn't like last time, plus we saw Puffins, climbed þúfa, and had a blast. Also, Iceland is not any warmer in July than it was in October, but it did stay light much later!

Dear Editor: Why are parents today required to buy unnecessary school clothes for their kids? Like swimming trunks. For swimming class, all boys were required to swim in the buff when I went to Mackenzie High. It saved my parents money and only cost me a little dignity. -I Feel a Draft in Hudsonville

ED NOTE: I guess we as a society have just evolved. And speaking to some of your former classmates, they all agree... Your dignity (as you call it) was very little. I believe George Costanza called it "shrinkage"!

Dear Editor: What was the best and worst candy you got when trick-or-treating on Halloween? For me, all candies were good except one. -Chairman, ABCC (Alliance to Ban Candy Corn)

ED NOTE: My favorite candy was (in no particular order) Cracker Jack, any full size candy bar, Milk Duds, and Charleston Chew. I also enjoyed a nice Slo-Poke. The worst was going to a certain neighbor who threw a popcorn ball unwrapped in my bag. By the time I got home, it was stuck to everything. I tell you, it was stronger than Super Glue. But, on the bright side, the day after Halloween, K-Mart put all their candy on clearance, so the following Halloween, kids had 364 day old candy... And no one was the wiser!

Dear Editor: I am assuming that the new McCarty baby is your grandson. Congratulations. Babies are darling. I still love my 2 grandsons 25 and 23. They are still darling. I love all you and Margaret do for the McCarty Metro. The jokes are great! Just wanted to reach out and send you love, hugs, and prayers. -Kitty

IT'S PUMPKIN SPICE SEASON!

One of the best things about autumn is seeing all the pumpkin spice items at your favorite stores and restaurants. Late August, September, and October means... it's pumpkin spice everything. The season is officially on with Pumpkin Spice Lattes and Pumpkin Spice Cake Doughnuts at your local coffee place. You can find pumpkin spice flavored iced coffee and pumpkin spice flavored creamer in stores. Pumpkin spice Pop Tarts, cakes, candy, cookies, and butter are all on your grocery shelves as we speak. Even over the last decade, the "seasonal creep" of pumpkin beers has them arriving ever sooner over, too. Pumpkin beer lovers don't complain. With all that in mind, we would like to share with you a couple pumpkin spice recipes which will click with your cravings this autumn.

Pumpkin Spice Dump Cake

Ingredients

  • 1 (29-ounce) can pumpkin purée
  • 1 (12-ounce) can evaporated milk
  • 3 large eggs
  • 1/2 cup brown sugar, packed
  • 1/2 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 (15.25-ounce) package spice cake mix
  • 1/2 cup pecans, coarsely chopped
  • 1 cup butter, melted

Directions

Preheat the oven to 350 degrees. Grease a 9x13-inch pan. In a large bowl, add the pumpkin purée, the evaporated milk, the eggs, the brown sugar, and the white sugar and stir to combine. Stir the cinnamon, the ginger, the cloves, and the salt into the pumpkin mixture. Pour the pumpkin mixture into the prepared pan. Sprinkle the dry cake mix evenly over the pumpkin mixture. Sprinkle the pecans over the cake mix. Drizzle the melted butter over the top of the pecan layer. Bake until the edges are lightly browned, about 50-60 minutes. Allow the cake to cool, and serve.

Pumpkin White Hot Chocolate

Ingredients

For the hot chocolate:
  • 5 cups milk
  • 12 ounces white chocolate baking chips
  • 1 cup heavy cream
  • 1 cup pumpkin purée
  • 2 tablespoons sugar
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

For the whipped cream:

  • 3/4 cup heavy cream
  • 3 tablespoons confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • cinnamon sticks, to taste, for garnish
  • ground cinnamon, optional, to taste, for garnish

Directions

In a 4-quart Dutch oven or saucepan over medium heat, whisk together the milk, the white chocolate chips, and 1 cup of the heavy cream until hot and creamy. Adjust the heat to a very low simmer and do not let the mixture boil. Whisk in the pumpkin purée, the sugar, 1 1/2 teaspoons of the cinnamon, 1 teaspoon of the vanilla, the nutmeg, the ginger, and the cloves and heat to a comfortable drinking temperature. In a bowl, beat the remaining heavy cream until it begins to thicken. Add the confectioners' sugar and the remaining vanilla to the whipped cream and beat until soft peaks form. Pour the hot chocolate into heatproof mugs. Top each mug with the whipped cream, the cinnamon sticks, and the extra ground cinnamon. Serve.
