THANKSGIVING

I remember a time when I was a young newlywed, not yet with children, and still learning how to cook and be a 'real grown up' at family dinner gatherings. My exent of cooking knowledge consisted of grilled cheese sandwiches or scrambled eggs.
One Thanksgiving I decided to be brave and ask the dreaded question, "What can I bring?". The hostess of that gathering, not knowing of my lack of cooking knowledge, suggested that I bring The Dressing. "Oooh, The Dressing," I thought, "is second in line of importance to the The Turkey." I couldn't back out now. I couldn't tell her I didn't know how to cook. I couldn't recounter with, "Can I bring grilled cheese sandwiches instead?".
I called my mother-in-law who was the best southern cook I knew (don't tell my mom that). She was the kind of cook who never had written recipes, but could tell you, off the cuff, how to cook anything. A little of this. A little of that. A pinch of this. Throw that in if you have it. You know the kind. Well, she began to give me a long list of ingredients to "throw in" for the dressing; cornbread, chicken broth, celery, onion, poultry seasoning, etc. etc. Finally she said to add salt and pepper to taste. I asked her how much of all of these ingredients do I put in. Her reply was to put in whatever amount I wanted, but to remember the secret to a good dressing is lots of black pepper.
On Thanksgiving morning I set out on my journey to make my first batch of Thanksgiving Dressing to be served with the Thanksgiving Turkey. I followed the recipe on the back of a Martha White Corn Bread mix and I chopped celery, onion, and added chicken broth and seasonings. I didn't know what it meant to "season to taste". I also didn't know what my mother-in-law meant by "lots of black pepper".
That afternoon, we all gathered together to share in a delicious Thanksgiving meal which all the wonderful cooks had prepared. After the blessing was said, the food was passed around the table. One could hear the sound of friendly chatter and conversations as the plates were piled high. Turkey and dressing were bountiful on every plate. It was not long into the meal before someone cleared their throat a little. Then another. Then another. Next, there began some muffled coughing. A couple of, "excuse me's", and some polite requests of, "may I have some more water". Within a very short moment, the entire table was coughing and clearing their throats and chugging down all of their water or ice tea and beggin for more. Finally, someone had regained composure enough to ask the revealing question, "WHO MADE THE DRESSING?". I said, "Uh, I did". All heads turned and I was staring into about 16 pairs of red eyes with tears rolling down their cheeks. "(cough, cough). How much pepper did you put in this dressing?" I hesitantly replied, "Lots". More coughing still. "What do you mean by lots?" "Well I called my mother-in-law for the recipe and she told me to put lots of black pepper in the dressing". Someone coughed out, "Well that you did!"
Everyone lived that day.
The next year when we all gathered around the table, said the blessing and began to pass the food, my nephew asked, "Who made the dressing?" My sister-in-law replied, "I did". My hephew said he would have some since Aunt Gina didn't make it. The entire table laughed.
It's been 28 years since that fateful moment in my life, and to this day when the family gets together for Thanksgiving, instead of hearing the usual, "Pass the dressing please", I still hear, "Who made the dressing THIS year?"
